Ditch the trucks and buy some more yompers?

you can't , if you have mounted troops all your troops have to be mounted,  the trucks will get you on quicker and as long as you can get out asap you should ok.

I don't think you can have pzsck on their own, they have to be part of a platoon.

I'd been thinking of ditching all of the trucks, freeing up points to bolster the infantry...

German pzshrecks operated as a platoon , they could be attached but they could be independent support units. They don't belong to the Rifle platoons but the Support platoon with the MMgs, M.Mortars and KFzD 233. (1943+)

If you ditch the trucks how do you have 6 units PzGren ? - its either all in vehicles or non.

Do you have to have any vehicles at all with Panzergrenadiers...?

No , its a May have , so you could have Pzgrenadiers with no vehicles. - certainly existed in the Ardennes  2/2pzgren were on foot.
