As long as I can fit it on a 5' x 3' table, and we can get someone to print up some nice mats (maybe do a bulk purchase for rules testers to keep costs down?), then I'll be happy

Table size is always interesting. If any table size can be chosen, rules have more chance of working well. Many rule writers have chained themselves to 6x4 and WRG basing before they even get started!   Some older members here might remember the complaint "we do not play PP games unless they are on a 6x4 table because we only use 6x4 tables.  The 5x3 is just impossible"..

I can understand the requirement of a table not being bigger than 6x4 for two reasons:
1. It is about the biggest size you can accommodate in your own home (unless you are fortunate enough to be a wargaming stockbroker);
2. Older gamers can develop back problems stretching across a too wide table.

However, the idea of not being able to spread a 5x3 mat on a 6x4 table leaves me dumbfounded!
